About !nk Espresso

For years, Dani Nixon and Carly Thornton would drop in for coffee at a little cafe in Largs called Rockefeller, with a dream of owning their own. Then one day they approached the owners and discovered the little cafe was ready to hit the market.

The dream became reality in July 2016 and !nk Espresso was born. With new staff, a new menu and new décor inspired by the local area, they’ve created a relaxed and cosy cafe with a beachy vibe.

“As locals we love being part of the community. To us, our customers are more like friends. We have a close connection with Largs Bay Primary School and love supporting them and other local community group initiatives. We use and support local suppliers and provide opportunities for young local people.

When we’re not working you’ll find us zipping around Largs and Semaphore on our scooters and enjoying life on the Lefevre Peninsula.”

    With over 18 years in hospitality Dani manages the day-to-day operations of the cafe and mans the grill and espresso machine like a rockstar. She’s also the creative mind behind the menu and loves developing exciting new dishes.

    Carly is the business mind behind the scenes, backed by 20 years of business and commerce experience. While she says she’s more comfortable sitting at the computer, you’ll often find her chatting with customers, clearing tables and washing dishes.
